Squirrel and Dumplings

2 squirrels, cut up
Water
1 Tbsp. salt
1 tsp. pepper
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. shortening
1 1/2 c. milk
1 Tbsp. flour

Place squirrel in a large skillet with enough water to cover. Simmer meat slowly until tender. Season dish with salt and pepper. Boil briskly and add dumplings made the following way.

Sift together flour, baking powder and salt; blend in shortening. Add 1/2 cup milk; mix quickly and lightly. Drop dumplings by teaspoonfuls into skillet of boiling squirrel. Cover skillet and cook for 15 minutes. Uncover and add 1 cup of milk in which a tablespoon of flour has been dissolved.

Note: If spoon used for adding dumplings is dipped into the hot liquid each time a dumpling is dropped, the batter will not stick to it.
